Beat Summer Heat With Black Elderberry Treats

Lemon Berry Trio Yogurt Pops

Makes 6

Ingredients:
½ cup blueberries
½ cup blackberries
2 tbsp Gaia Herbs Black Elderberry Syrup
2 ¼ cups of vanilla Greek yogurt
Juice of 1 medium lemon (about 4 tbsp)
1-2 drops of vanilla

Instructions:
Add blueberries, blackberries, and Gaia Herbs Black Elderberry Syrup to a blender and blend until smooth. In a separate bowl, mix yogurt, lemon juice, and vanilla. Fold in blended berry mixture (but don’t overmix, or you’ll lose the swirl). Spoon the mixture into molds and put an ice pop stick in the center of each. Freeze for about 6 hours, until firm.

Just before serving, put the molds in warm water to loosen them and make them easier to remove.

 Elderberry Yum Yogurt

Elderberry Yum Yogurt

Ingredients:
¼ cup blueberries
¼ cup blackberries
1 tsp Gaia Herbs Black Elderberry Syrup
1 tbsp walnuts
1 cup of vanilla Greek yogurt

Instructions:
Mix all ingredients and serve. Feel free to substitute other favorite fruits (peaches, strawberries) or nuts (almonds, pecans).

 Deconstructed Elderberry Pie Ice Cream

Deconstructed Elderberry Pie Ice Cream

Ingredients:
½ cup regular rolled oats

½ cup packed brown sugar

¼ cup all-purpose flour

¼ tsp ground nutmeg, ginger or cinnamon (or a combination of all three)

¼ cup butter

1 tsp Gaia Herbs Black Elderberry Syrup

Bowl of ice cream (or other non-dairy favorite frozen dessert)

Instructions:
For pie topping, combine oats, brown sugar, flour, and nutmeg/ginger/cinnamon in a mixing bowl. Cut in butter until mixture resembles coarse crumbs. Sprinkle mixture evenly on baking sheet and bake at 375 degrees for 10 minutes until slightly crispy and fragrant. Cool and crumble over ice cream and drizzle with Gaia Herbs Black Elderberry Syrup.

Ingredients:

1 tsp Gaia Herbs Black Elderberry Syrup
¼ cup water
¾ cup grapefruit juice (or squeeze 1 large grapefruit)
1 cup blueberries
½ cup raspberries
½ cup mangoes

Instructions:
Add all ingredients to blender; blend until smooth. (Tip: Use frozen fruit for a thicker consistency).

 Cha-Cha-Chia Elderberry Pudding

Makes 4 servings

Ingredients:
4 tsp Gaia Herbs Black Elderberry Syrup
2 cups coconut milk (or almond milk)
6 tbsp chia seeds
½ tsp vanilla extract
Fresh berries (raspberry, blueberry, etc.)

Instructions:
In a bowl, mix the coconut milk, chia seeds, vanilla, and Gaia Herbs Black Elderberry Syrup. Cover and refrigerate overnight.

Stir well, divide into individual portions, and serve with fresh berries. Optional: add granola at this step for crunch.

Makes 6 servings

Ingredients:
1 garlic clove, minced or grated
1 inch ginger, grated
1 tbsp Dijon mustard
1 lemon, juiced and zested
½ cup olive oil
1 tsp Gaia Herbs Black Elderberry Syrup
5-8 medium oranges
1/3 cup pomegranate seeds
¼ cup almond slivers (optional)
Shaved parmesan cheese (optional)

Instructions:
Whisk together garlic, ginger, Dijon mustard, lemon juice and zest, olive oil and Gaia Herbs Black Elderberry Syrup in a small bowl. Remove peel and outer membrane from oranges and cut crosswise into half inch slices. Arrange orange slices on a platter and sprinkle with pomegranate seeds, almond slivers and parmesan cheese. Drizzle salad with dressing.
